It took a bit longer than expected, but it is here !

After a meeting with the guys from Xoco Gourmet,
a new cacao provider, we decided to change our plans for the bûche, and go full(-ish) chocolate !

The idea became to work products from Latin & South America,
and it only made sense to pair chocolate with coffee and corn.

We made a blend of their Mayan Red 70% and 48% for a balanced chocolate taste (Honduras & Guatemala).
This chocolate whipped ganache covers a soft coffee crémeux, made from a Costa Rican coffee roasted by Uncommon,
which you can drink in store if you order a filter coffee.
To add crunchiness, we made a corn flakes base, mixed with hazelnut paste/praliné and milk chocolate.

You can now pre-order yours until Friday December 22nd
and pick up any opening days,
even on Christmas Eve !
