You are almost done with 2025 !

To help you finish 2025 with a bang,
our traditional Bûche de Noël is here
- and you can enjoy it anytime, not just on Christmas! -
This year, we did our best to work with vanilla,
but not your typical one.
We chose to work with a vanilla from Uganda.
The Vanilla Family approached us a while ago, and we used their vanilla on some occasions (like the vanilla tart 2 years ago).
Returning to their vanilla for this year's Christmas log was an easy choice. Beyond the outstanding flavor, The Vanilla Family funds projects that promote education and sustainable agriculture near their farms.

Let's dive into the Bûche's elements!
First, I experimented by roasting some vanilla beans and infusing them in milk. When blended, it gave a very interesting color and taste to it. Then came the crème brûlée idea.
No crème brûlée without caramel, so I added a oozy vanilla caramel sauce with hints of butter and sea salt flakes.
Around it all, a vanilla mousse, halfway between a cream and a chantilly. Is it only cream ?
Oh no, there is also a generous piece of Savoie Cake (similar to the one my godmother was making), and a base of corn flakes mixed with almond paste and dulcey chocolate.
We even made a christmas tree in "spritz" biscuit
(which Nawal cannot stop eating).

They will be available in the shop everyday from Thursday 11th,
in 4- and 6-person sizes
We highly recommend to pre-order as there will be limited quantities on display.

The shop will remain open as usual until December 24th included, after which we'll take a small break. We'll see you back in the new year with some Galettes des Rois!
