What an intense month of January it was.

With over 400 galettes sold, without counting the ones we made for slices, it has been great to see you guys back for this,
and all the new comers (a lot of French names on pre-orders)

There has been a lot of good feedback from the Fève coffee, which gave me the idea to re-work one of our classic, that we actually
did not make in 2025 : the Cappuccino Tart.
This time, we are using beans from Burundi, roasted by our partners Uncommon. We use it inside the hazelnut praliné and we also infuse it in the cream to make a coffee crémeux.
The mascarpone chantilly is also changed, as we are now
making a whipped ganache for a lush result.

It is available on display every Fridays and Saturdays of February, in individual and 3-4 people (limited quantity).
If you feel like sharing, the 6-8 people size is on pre-order only.

On a side note, we are sad to announce that we are stopping our signature Chocolate Croissant. It had a good run, helped us to get known when we started, but it is time to let it go.
From this Saturday, we will have a nice chocolate pain suisse instead, made with Xoco chocolate (Mayan Red 62%),
you new favorite :)

Lastly, with costs rising again and again (ingredients, minimum wage going up 45% since opening, etc..) we will have to change the prices of most of products from next week.
We will still be within market price, finding the right balance with being affordable and allowing our business to keep growing.
