Following the hints in last month's newsletter and the feedback from the survey many of you completed, we are excited to announce our latest addition!

After weeks of research and testing alongside our intern, Irene,
we came up with a recipe for vegan croissant dough, that is good enough to be put on display. Some even say better than the regular one, but you have to be the judge for it.

We used that new dough to create this month's special :
a Strawberry Elderflower Danish.
It is perfect for the season, with a rich taste of Gariguette and Lambada strawberries, complemented with a subtle taste of Elderflower. And because the dough is vegan, all the components for the special are also plant-based !
No gelatin was used, just a clever mix of different gelling agents (also vegan), in addition to high-quality dairy alternatives.
We are confident that if we hadn’t told you it was vegan, you wouldn't be able to tell the difference.
It is available in store every Friday and Saturday of this month, but we still recommend you to pre-order to avoid any disappointment if we suddenly run out.
Moving forward, we plan to always keep a vegan viennoiserie option on our menu.

With these new arrivals, we had to say good-bye to some of our favorites :
the chocolate pain suisse, madeleines,
cornflakes cookies and granola.
However, we are already working on a new version of the suisse,
which will be available soon.
