Week 30

It seems like we found a good set-up in order to help our customers. Even is the second Sumup is acting up a bit, it still made the walk-in line go way faster. Too fast maybe ? It seemed like the croissants quantity available at the opening sold out faster than last week. Way before the next oven was ready. There was other products available obviously, but some on view have tunnel vision on the plain croissants. I am still going to play around with the amount of each items that should be in the first two proofers of the day, so there might still be some periode where we will miss croissants (sorry geen sorry), or maybe less diversity.

We will also limit again the amount of people inside. We are already 4 people working, and sometimes too many customers walk in, preventing the people in the pre-order line to enter and pick-up what they bought online. We will then need 1 customer per person in the front of house, I let you do the maths.

Talking about front of house, we are still looking for a freelance person for the summer (Wednesdays and Saturdays, plus extra days TBD) which would lead to a contract before the end of the year, depending on our development.

On Thursday, I am getting the second dose of the Covid vaccine. The first one did not have that much effect on me, beside a harder time to focus. I am dreading at least the same effects, so I have decided to not offer any dessert of the week, in order to be able to still manage to deliver and meet expectations with the products.

We will also offer a different coffee on the batch brew. We will have a tasty Costa Rica, from White Label Coffee, which can also be served iced on demand.

Brave the rain to come see us, it will be worth it !

Reminder : - Pre-order your treats for Saturday is highly recommended (if sold-out, there will be no restock). - Tomorrow, we will be open from 8 to 12. - Saturday, make sure you come at the right time based on your time slot. No worries if you are a bit late. - Two lines are available : one for Pick-up on Churchill-lan, one for walk-ins on Maasstraat. - Some products will be available on the counter for walk-ins.
