Week 33-34
Soon the end of an Era.
But the begining of a new one as well.
Our very first employee, Davinia, joined us in September 2021.
After the Het Parool craze, we were in need of help to meet the consistent demand we started to have. And one day, Davinia shows up to the store, and spontaneously offers her help. She was freshly graduated from ROC, in both Bakery and Pastry. But it was also the vibe she was giving that sold me (and her Nike Dunks). Having a second job on the side, I could only offer her a part-time contract. Though, she learned quite fast, meeting the quality we were applying in our products, she has been a big part of Grammes's success
for the past year. On September 1st, she will fly on her own.
To celebrate her time with us, I wanted her to be in charge of the Saturday Special : a Yuzu and Matcha Tea macaron.
She has been developing that receipe for another cafe in the Center of Amsterdam, a got a really nice success. This time, we will use a Japanese first grade Matcha Tea, from our friend Lisa Mueller.
Last week, we made our first try-outs to figure out which cakes will be on display in September. Thank to the good base of desserts we were offering over the last years, we did not need much time to figure it out. This week, we will just need to fix a couple of things to perfect the visuals and taste, and we will be ready once all the rings arrive.

Wed-Thurs-Fri from 8:00 till 14:00,
Saturday from 9:00 till 16:00.
- Pre-order your treats for Saturday is highly recommended.
- Make sure you come at the right time based on your time slot, not earlier. But no worries if you are a bit late.
