Week 38

As I announced for the last couple of weeks, a special collaboration will happen with Cesar Augustyniak this Saturday.
To end September the right way, we have decided to invite our friend and pastry chef César Augustyniak to share with us his
pastry style and celebrate scrumptious vegan desserts.
We met back in Paris and it immediately clicked between us.
Coming from similar backgrounds, having both trained and
worked for renowned pastry chefs, evolving and blossoming
along the way, today we are excited to team up to offer
exclusive items, specially crafted for grammes.
With the same love for fresh baked items made out of premium ingredients, looking for flavors and textures, we wholeheartedly agreed on providing the best tasting experience from France.
Only available on September 25th via pre-order,
for this first collaboration, César will add two items:
- a chocolate-hazelnut praline tartlet
- a fig and raisin pizzetta

First, is sophisticated all vegan chocolate tartlet revealing a game full of flavors and textures. A gluten-free tart dough filled with a dark chocolate ganache, caramelized cocoa nibs, hazelnut praline, and roasted hazelnuts. The pinnacle of vegan yumminess!
Secondly, César has also been inspired by an all-time favorite, pizza! This pizzetta is made of a plant-based brioche dough, a generous layer of almond cream, topped with juicy roasted figs, some fresh grapes in the place of olives and a pinch of blackcurrant pepper for the twist. To be enjoyed immediately !

After that, we will be closed for about 10 days, as we are heading out to Mexico. For fun, but also for work. We will attend to our friend's wedding, Sofía Cortina. She also just opened her own pastry shop, so I will put some (or maybe just one) of grammes's signature products at the counter for a day while we are there.
But I will save that for next week's newsletter, else I will have nothing to write.
