Week 11

If you have followed our stories last week, we were close from a tiny catastrophe, missing a day of sales. I noticed a small decrease of quality on the products baked toward the end of the day on Wednesday.
First, we decided to make a couple of other test on Thursday, knowing that it was a fermentation issue : still not great.
Clock was ticking, as every test would only give its result after 3h of proofing, 20min of baking, and we would still need to let you guys know if we would be open the following day or not.
Luckily, we realized the yeast was not as efficient as normal, and the humidity level in the proofing chamber was not consistent.
Easy fixes, and we could offer you products right on time for the Friday opening, and even better ones for Saturday. All of that managing a very limited amount of waste.

Moreover when the war in Ukraine has globally increased the price of many other products, including flour. So far, we are mostly and largely impacted on our energy bill. We will try for as long as possible to absorb these rise over the next few months, and keep our products in their price range so you can come enjoy them.

For this week's pastry of the weekend, we are offering a comeback to one of our first pastry : the Cappuccino tart.
This year, we made it using the coffee from Uncommon, beautiful beans from Honduras, Los Alpes.
We are super excited for you to try this one.

- Pre-order your treats for Saturday is highly 
recommended.
- Make sure you come at the right time based on your time slot, not earlier. But no worries if you are a bit late.
- Two lines are available : one for Pick-up on Churchill-laan, one for walk-ins on Maasstraat.
