And just like that, we are back in Winter.
Or maybe the beginning of Spring was just too nice that having a regular April weather is making us too disappointed.
We will still try to make you forget about the rain and cold with this weekend's dessert : a Tropical Tart.
If you have enjoyed the choux we had last Saturday, we will be using the same flavors in a tart. This time, we will add a Coconut praliné at the bottom, in order to give even more greediness and crunch to the combination. The mango will be used this time as a gel to coat the pineapple and balance their acidity.
Really excited for you to try that new version.
This week, we will also make time to try things out for Easter.
Mostly brioche based, we will explore some options like hotcross buns, or an Easter version of the Stol, or even Koughlof...
We will also finalize the Easter dessert so the Easter Menu will be available for pre-order as early as possible.
As announced last week, we will soon be able to welcome you on Thursdays. We still have a couple of things to arrange with the staff, but a 4th opening day is coming and we are really excited to see your faces an extra day :)
