Week 20

Phew, what a weekend. Thanks to the team rocking in the shop while we were away, we are ready to attack another week.

While we were in Paris region for a wedding, we stayed near a local roaster, so we paid a visit to Brûlerie Belleville. As the season for Guatemala coffees are coming to an end, we were looking for something a bit different. Out of their selection, we got to try a new Rwanda coffee from Gitesi, Red Burbon, Natural process, and we cannot pass it. We took 2 kilo to bring back to the shop, and it will be served on the batch brew on Friday and Saturday as a guest.

Not only the coffee will be served to drink, but also to eat.
I remembered that Pierre Hermé used some Red Burbon coffee about 10 years ago in his Infiniment Café Collection while I was working there, and it was life changing compared to the coffee he was using before for his coffee based desserts (alongside with the Iapar).
That experience also shapped my coffee taste in dessert, and I have been looking for more lighter roast and specialty coffee to use in my tiramisu, Opera cake, cappuccino tart...

As Saturday will be my birthday, I thought it made sense to offer that Paris roasted coffee, with one of my favorite desserts we've done
at the shop so far : the Cappuccino Tart.
You'll be able to get it in Individual size, 3-4 people and 6-8 people.

We hope to see you anytime this week, but please don't ask for my age on Saturday, I'll deny and answer 25.

Wed-Thurs-Fri from 8:00 till 14:00,
Saturday from 9:00 till 16:00.
- Pre-order your treats for Saturday is highly 
recommended.
- Make sure you come at the right time based on your time slot, not earlier. But no worries if you are a bit late.
- Two lines are available : one for Pick-up on Churchill-laan, one for walk-ins on Maasstraat.
