Week 21

With nicer days ahead, we decided to finally offer a soft drink selection for you to try with our pastries. In addition to the Alain Milliat OJ, we of course added water. Since last year, we have been wanting to work with some of our customers : Charlotte from Yaya Kombucha, and Tessa from Dorstlust (which distributes Charlottes's products).
So we chose the Yuzu Kombucha from Yaya, the Jasmin Tea White Peach from Hi-Five & the Mango Mama Limonade from Brand Garage.

We have also upgraded our wine selection.
Two whites, one "rosé", two reds and a Frenette (i'll get to it a bit later).
We have not tried all of them yet (as you probably can understand why), but our curiosity naturally went on the Frenette called "Supercopter".
It is a particular kind of drink, half-cider/half white wine, but made from Ash leaves. Super light, pearly on the tong, it could easily replace your lager beer or Kombucha if served cold, as it has less than 6% alcohol.
We also tried the "So What", made by our wine importer, Jan Van Roekel, and the help from Des Grottes. Trouble red, light acidity in a super juicy/fruity red, this one could also be an easy thirst quencher.

Electricians finally made their way to the shop yesterday (yay...)
They did not do any work, but they came to see what would need to be done. We have decided to not rush the installation of the coffee machine anymore, and wait until the new counter to come in.
Some news about it arrived also yesterday, and it should be delivered on week 29. We will not put our hopes too high up, so we are expecting a light delay, but everything should be up and running in August.
Then, we can start training our staff to make tasty milky coffee, but we are also considering hiring a bartista from late August/September.

Another week, another version of the Strawberry Tart, sorry not sorry.
There are just too many good kinds of strawberries to only have one version. This week, we will use the mara des bois strawberry, easy to recognize thanks to its very small round shape. I have noticed that it was fitting really well with pistachio, so I'll add a pistachio frangipane at the bottom of the tart shell, and a pastry cream whipped with mascarpone below the strawberry pieces. You'll love it.
You'll be able to get it in Individual size, 3-4 people and 6-8 people.

To finish, I wanted to thank you for the birthday wishes (cards and gifts), you guys are sweeter than our pastries :)
