Week 24

After celebrating Mothers last month with a beautiful pavlova, we are going to celebrate Fathers. Usually the go-to falvors would be coffee, chocolate, or even smoky falvors, but when I checked the forecast for the end of the week, these flavors would feel a bit too heavy for the heat coming. Nawal then reminded me of a coconut, lime and mint tart we made last year and I thought it would be a perfect match in the end.
Inspired by a summery cocktail classic, we can also find that flavor association in south east asia cuisine. I just need to re-work a bit the visual compared to last year's version, hoping it will help to have an even better the ratio coconut/lime. It is also one on my favorites from last year and I am super excited that it can be part of your family celebration (or just as a lonely pleasure).

The heat will be a new challenge this week. We have had some warm days lately, it was still challenging for the croissant dough and its 12 layers of butter. But it is not our first summer on the Maasstraat,
so I remember a bit how to deal with the rising temperature throughout the day, and it is interesting to share that experience with our staff.

Last week, Charlotte from Yaya Kombucha texted us that they received their Yuzu order (that they use in the Kombucha we sell at the shop). She has been teasing me about that special citrus for so long, that we arranged that she'll drop some by the shop. It is a very nice fruit to work with, but also needs some fine tunning to pair it with other flavor.
Let's hope I manage to find a new dessert with yuzu before we close.
