Week 30
But not without any pain.
After a very relaxing week in Burgundy, a 90min delay was announced for our train back to Amsterdam last Monday.
We arrived home around 1am, knowing the night would be short :
"Is the old bar out ? The counter will arrive on Wednesday" said a text we recieved before hoping on the train. Ahead of schedule, yay !
But damn, there goes our second week of rest. "To the sea!"
After hammering down the 4 heavy pieces of the counter on Tuesday, which was one of the few things we kept from the previous owners,
and 2 days of hard work for the builders and other workers, our vision was installed and is (almost fully) ready to use !
Thank you Telma and Matthew from Loom Atelier for translating our wish into drawings and finding the right people to execute it all.
On Friday, some details needed to be fixed at the shop, when a sudden smell of burnt toast came from the sidewalk. The electricity from the bloc Maasstraat/ Churchill-lan was out due to a overheated underground cable. The people from Liander worked until 2pm to find it and give the power back in the neighbourhood.
Because of the holidays, we did not lose many products and ingredients (still some, annoyingly) because our fridges and freezers were quite empty. But we were glad it did not happen when we were open. We would not have been to operate the following day, and quite some time would have been needed to recover from the loss.
Massive props to Ciro from Magiamore, who was making pizza all evening with a headlamp and his wood oven.
The next step now will be to install the espresso machine some day in August, and work on the new range of pastry in order to have everything ready from September. Recruiting is still a work in process as well. We are still looking for a Barista to complete our team for the front of house (experienced and dutch speaking are a must), ready to start from August/September. For the back of house, we had some good applicantions and are now in the selection process.
Hopefully we can find the right fit soon.
For this week, I hope you will understand that you might not find all the products you wanted. As everything is made in-house, some products will take time to come back on the counter, but from next Wednesday, we will have the same range of products that before the break,
I promise.
We are super excited to welcome you in a sligtly upgraded shop,
see you guys soon !
