The shop will be closed tomorrow...
Our pastry team will be working though, as if it was a Tuesday,
but the front of the shop will remain unused.
Don't worry, the shop will be open again on Thursday 15th !
As you have noticed over the last few weeks since our summer break, some changes are appearing one after the other inside the shop.
This time, it is a new floor that is being installed.
(which explain why the newsletter is coming out this late today)
But, the installation has been delayed because of some moisture was discovered on the corners yesterday while removing the old floor.
The leveling layer could have not settled properly, and resulted in a poor result. We were left with a bare floor, unsuitable for food making, and a lot of questions. We decided to rent a dehumidifier, and left it on all night. When the team came back this morning, they started to apply the base layer, which needs to cure for a couple of days. Not suitable with the 100+ people usually coming in the shop on Wednesday.
We are then able to use the "floor" like it is now until they come back on Monday to finish installing it (which should have been done today).
For this Saturday, we want to introduce the Flan Parisien.
A staple in French Pâtisseries, our version uses the dough from another dessert, the Gâteau Basque, to which we added hazelnut powder.
A perfect combination with the organic Madagascar vanilla.
We had some on the counter last Saturday, available per slices, but also as a 5-6 people full ones.
Who will be order 5000 since we opened the webshop?
We will fully refund that order to celebrate this milestone together.
