Week 40

Don't get fooled by his nice face, Alex is a killer pastry chef!

A few weeks after we opened, Elodie (aka Friendsandforks) asked if we heard about that restaurant near by, making Pain chocolat.
Very surprising, but after a little digging, we found out that because of Covid-19 restrictions, the pastry chef from Vanderveen was making crazy viennoiseries.
That's how we met Alex.
We went for dinner there as soon as restrictions were lifted, and the whole concept of Vanderveen was a real refreshment from what was available in Amsterdam. From the music played,
the cuisine of George Kataras, Mohamed Aous's wines selection, and obviously Alex's desserts.

Last year around the same period, we invited Cesar Augustyniak, and we thought it would be interesting to invite more people who are shaking up pastry codes. Alex's name instantly came in mind. The idea was to have the filled square croissant, his signature dessert, and an individual pastry, with flavors he would use in a Michelin star restaurant dessert.

The square croissant will be filled with a cinnamon diplomate cream and Pecan praliné. Can anything say Autumn more ?
The choux will be super fun, with a caramelized pop corn cream, pickled blueberries and blueberry jam.

For Saturday, October 8th only !

Quantities will be super limited, about 80 pieces of each.
Half of it will be available for pre-order,
the other half will be for walk-ins.
Our regular pastry and viennoiserie range will also be there,
don't worry !

- This week, we are open :
Wed-Thurs-Fri, from 8:00 till 14:00,
Saturday from 9:00 till 16:00.
- Pre-order your treats for Saturday is highly recommended.
- Make sure you come at the right time based on your time slot, not earlier. But no worries if you are a bit late.
