Week33

Exceptionnaly closing.

Yes, we will be closed this Wednesday 18th of August.

It is important enough to put it on the top of the email as many of you are not reading the newsletter to the last word.

Last Saturday, towards the end of the day, I started to have some stomach burns, felt light headed and my legs were suddenly tired. Once we arrived home, I crashed onto the bed, shaking, sweating, dizzy, and slept for a complete 14 hours. Sunday was far from being a Funday, as I struggled with the pain and weakness for the whole day. Thanks to Nawal's care, I still managed to get a GGD covid test (negative) and some administration work done. Something that I meant to do for quite a while now, but never really took the time for : a production recap of the past weeks.

And the result was a shocker : a 57 % rise of production since the article from Het Parool (compared to our busiest week in June). Remember when I use to say that holiday season generally was a quiet period and that I would have time to work on new things ?

I already knew back then that I needed to hire, but the Parool Rush and the summer period did not help with finding the right staff for both front and back of house. I was also too focused on trying to keep up with the demand, to satisfy as many clients as we can (sorry if we still say "no" too often in the shop) that I lost track of the amount of time I was spending in the kitchen, and forgot about many other things, but most importantly, myself. Even if the mind says "everything is fine", the body can show us otherwise, and it is time to listen to it (and to Nawal).

So this week, the focus will be recovery, as I am not feeling 100 and busier days are ahead for both of us. Being only open this Saturday will help producing more reasonable amounts of products, catching up on admin, finalizing the first row of hiring, thinking more about grammes's future plans and rest. You will still find our regular range of viennoiserie products for pre-orders, but no pastries of the week, beside the special orders we already took.

Probably not the kind of email you were expecting this morning, we will come back with a renewed energy, larger staff, and fun things in the making.
