This pastry is composed with a croissant dough filled with a strawberry jam with pieces of strawberry and flavored with Elderflower syrup. It is all covered with a custard lighten with a chantilly. We added pink elderflower and lime zest for decoration. It has been created in collaboration with our intern, Irene, as part of her graduation thesis. Oh and it's completely vegan.
